Prawn fried rice

 

Ingredients:

  • 2 tbsp sesame oil
  • 2 cloves crushed garlic
  • 1 tsp minced ginger
  • 1 onion, diced
  • 200g frozen prawns
  • 1 carrots, quartered
  • 2 eggs, whisked
  • 3 cups cooked rice
  • ½ cup edamame beans
  • 2 tbsp soy sauce
  • 2 tsp sweet chilli
  • 2 spring onions, sliced

 

Method:

  1.  Heat oil in a wok or large fry pan over medium heat. Add the onion, garlic & ginger and stir-fry for half a   minute. Add the prawns and carrots and season with salt & pepper. Stir-fry until just cooked.
  2.  Pour in the eggs and spread them over the pan. When they are almost set gently break them up with a   spatula.
  3.   Add the rice, soy sauce and sweet chilli sauce. Stir-fry until well combined. Mix through edamame beans.

       4.  Toss through spring onion and serve with extra salt and pepper.
